Carob sits apart from the rest of our lines. It is an ingredient crop rather than fresh consumer produce, and most of the value moves as processed derivatives: carob gum (E410), carob flour, roasted powder and syrup. Buyers here are pharmaceutical, cosmetic and food ingredient manufacturers who work to specification rather than retail grade-outs. Pods are harvested in a short window in late summer, then processed and held, so derivative supply runs well past the harvest itself.

Carob availability across the year
The pod harvest is a single narrow window in August and September. We present it that way rather than widening it, since confirmed data on this line is thinner than on our core fresh categories. Processed derivatives are a separate conversation and are not tied to the harvest calendar.
Derivatives (flour, gum, powder, syrup) remain available beyond this window through processing and storage.
